| Here's some tasty spring recipes for that venison harvested last fall and delicious Wild Rice Soup... mmmmmm Tasty! |
Venison Meat Loaf
1 lb. ground beef
3/4 lb. ground venison
1/2 cup catsup
1 1/2 cups dry bread crumbs
1 package dry onion soup mix
1/8 tsp. accent
2 eggs, beaten
1/2 cup water
Mix all ingredients well. Put in a large loaf pan. Put hole on top and pour (1) 8 oz. can tomato sauce over mix. Put in oven and bake at 350 degrees for 1 hour. •
Wild Rice Soup
2 cups cooked wild rice
2 tbsp. margarine
1 tbsp. minced onion
1/4 cup flour
1/2 tsp. salt
4 cups chicken broth
1 cup half and half cream
Melt margarine in a sauce pan and saute’ onion, then blend in the flour. Gradually add the broth and half and half cream. Cook, stiring constantly until mixture slightly thickens. Stir in rice and salt. Simmer for 5 minutes. Garnish with parsley. This recipe makes 6 cups. •
